If you walk under a tall tree and find yourself stepping on spiky burrs, you’ve probably found sweet chestnuts 🌰 one of the best wild foods of autumn.

The fall winds knock them to the ground which is good because the chestnut trees here are often 100 ft tall or more! But you have to be quick because the squirrels love them too.

There’s really nothing like roasted chestnuts, they’re sweet and nutty and nutrient dense. I’ve also ground them into chestnut flour, which adds wonderful flavor to pancakes, cakes, and cookies. Lobster mushrooms 🦞 are one of those bewildering fungi that is actually a parasitic ascomycete that colonizes certain mushrooms and turns them into this vibrant orange color.

Despite their name, lobster mushrooms (Hypomyces lactifluorum) are not actually a mushroom!

They are still thrilling to find as they tend to grow very abundantly in an area. If you see one, chances are there’s more nearby.

They are considered edible but some people have issues digesting these…including myself so while I enjoy finding them I typically just enjoy looking at them!

Gathered a few wild crabapples on the way home this weekend. These are a bit tart to eat on their own but they make great jelly or even cider. I live to combine them with wild rosehips and a few cinnamon sticks to preserve a bit of those fall flavors. And rosehips are loaded with vitamin C, something we can all use an extra dose of this time of the year! Happy fall 🍂

It’s mushroom season and it’s turning out to be a good one! We’ve had early rain followed by some nice dry sunny days. Basically perfect mushroom growing conditions. There’s nothing like seeing them covering the forest floor in autumn 🍂 on our walks. Evidence of the interconnected mycelium networks that exist bellow the surface. The first one is a queen bolete, edible when smaller and the others are non edible boletes and a hedgehog 🦔 mushroom. Have you spotted any mushrooms this fall?

Spent a wonderful weekend camping in the mountains

Spent a wonderful weekend camping in the mountains. The weather was warm and sunny, the night skies were so good away from light pollution. We cooked our meals over a camping and spent the days hiking and paddling on the lake. It was wonderful being completely unplugged in nature, needed that recharge!

Woke up to this view today. We’re camping up in the mountains this weekend. It’s was a beautiful night with the moon and stars ✨ over the lake, and listening to the owls calling at night.

Today we went on a hike in the forest around the lake. Found so many mushrooms along the way! Hopefully you all get to enjoy the beautiful weather this weekend! ☀️🏔️
